Tender Chicken Gizzards in Tomato & Feta Ragout
Ingredients
◉ 500 grams of chicken gizzards
◉ 2 tablespoons of olive oil
◉ 1 onion, chopped
◉ 3 garlic cloves, minced
◉ 400 grams of canned tomatoes (or 4 fresh tomatoes, chopped)
◉ 100 grams of feta cheese, crumbled
◉ 50 grams of Kalamata olives, pitted
◉ 1 teaspoon of fresh oregano, chopped
◉ Salt and pepper to taste

Cooking Method
1. Heat olive oil in a pan. Sauté garlic and onions until soft.
2. Add gizzards and cook 5–7 minutes until lightly browned.
3. Add tomatoes, salt, pepper, and oregano. Simmer 25–30 minutes until gizzards are tender.
4. Stir in feta and olives just before serving.
