Mediterranean Chicken Box Roast with Herbs
Ingredients
◉ 1000 grams of mixed chicken cuts (legs, thighs, breasts)
◉ 4 pieces of garlic cloves, minced
◉ 2 tablespoons of fresh rosemary, chopped
◉ 2 tablespoons of fresh thyme, chopped
◉ Juice of 1 lemon
◉ 3 tablespoons of olive oil
◉ 4 medium potatoes, cut into chunks
◉ 50 grams of Kalamata olives
◉ Salt and pepper to taste

Cooking Method
1. Preheat oven to 200°C (400°F).
2. Marinate chicken with olive oil, garlic, herbs, lemon juice, salt, and pepper for 30 minutes.
3. Toss potatoes with olive oil, salt, and pepper.
4. Arrange chicken, potatoes, and olives in a roasting tray.
5. Roast 40–50 minutes until chicken is cooked and golden.
